How do you determine your price to sell a half of beef to someone. I sell by hanging weight, call the local butcher and see where they are on things.. Anyone have any other formulas or methods?

price I'd get at auction for the live animal + $1000 + Kill fees and cut/wrap divided by 4 if I'm selling quarters. If I can't make a $1000 over auction price it isn't worth dealing with the hassle of dealing with people, having them back out, etc. Selling a 1/4 beef that should hang at 800 lbs and be about 125 lbs cut/wrapped per quarter for $1000 right now.
