Sudan Hay/When to cut it?

I am expanding my operation this year and am going to need to buy some hay. A farmer close to one of my farms grew some sudan hay last year and sells all of it. What are your opinions on this for hay. Also, when Dad raised it when I was a kid he cut it when it was about waist high. This guy let his first cutting get about six feet tall. Would that make it a too "stemmy" for lack of a better word, or would it be ok? Any thoughts would be appreciated.

Sudan hay makes great hay, right up there with Johnsongrass when it is cut right. We always used to cut it about the time it started to head out. If it was 6 feet tall, it will probably have stalks and waste, but it will still be good hay.
 
I appreciate the response. I really wanted to business with this farmer because he was so close and the price was fair. I was just worried about too much stem. Thanks!
