Got this recipe from my mom, it's not carrot cake, but a true quick bread. So good!! Works in a bundt cake pan too.

MELT AWAY ORANGE CARROT BREAD



2 l/2 cup flour

2 cups sugar

2 tsp. each baking soda and cinnamon

¾ c butter, melted

l/2 c Plain Yogurt

2 Eggs

3 cups grated carrots

l/2 c shredded coconut



Glaze

1 Cup Powdered Sugar

1 Tbsp. grated orange Peel

l/2 cup Plain Yogurt (Or slightly less)



In 3 qt mixer bowl combine all dry ingredients. Add melted butter and yogurt;

½ to l minute. Add eggs one at a time, beating well after each. By hand stir in carrots and coconut. Pour into loaf pans filling ½ to ¾ full which have been well greased & floured. Bake at 325 -350 for about 30 minutes or until tooth pick inserted in center comes out clean. Cool in pan 10-15 minutes. Remove and pour glaze over bread after you have pricked the top with a fork to make slight holes for the glaze.
 
Sounds really good! I'll be trying that when it cools down enough to run the oven. It seems like it might have the same taste as the carrot cookies with orange icing that my grandma used to make (and everybody loved), but a lot less work to fill the bread pans than make sheet after sheet of cookies. Thanks for posting!!
