I would say that the reason is I have actual personal experience with this - weighed the animal in and weighed the product out.

The animal and the carcass never left the property.

Plus, we actually participated in the cutting and grinding. So there was not a hope in Hades that there was any theft or cheating involved.

We have probably done this about once every two years for the past 10 years or so. One year we did it twice and donated the burger to the girls hockey team so they could sell it to help pay for a trip to a hockey tournament in Europe.

I admit that the first time we did this I was surprised as well. Now I know what to expect.
