Lets say you have a 1200lb cow that you are going to butcher, roughly how many pounds of meat will you get? Never butchered an older cow before, is there any reason why a person shouldn't?
 
It depends on how you cut her. Bone out into all burger you will get about 320-340 pounds of burger depending on the cow. Cut into steaks etc you will get more because you will be getting bone back in packages. An older dry cow can eat fairly good. Not melt in your mouth tender but good flavor. The best way is to have the butcher cut off a couple of the best steaks a day or two early. Try them. If you like them cut accordingly. If not grind her into burger. It will be much better burger than you get at the store.
