Im not quite sure how much "yeild" you would get off of them. we had 5 steers done last year but we didnt keep the ribs. It depends on how old he animalis and how big he is too.
One of the distinguishing EPD's on different breeds is the rib eye area. Check the breed you have with the..... norm...... thru that breed association. Then your animal's ultrasound results can be compared.
