Looks yummy to me. Like I say, "how much marbling do you need?" Some pictures people post there is more white meat than red meat. Yours looks "just right".

I agree, some fat is needed for tenderness and flavour but if one wants grease, eat more pork and lamb.

Our commercial cattle that are born in November are turned out on the desert in April, trailed up to the mountain and weaned around September 15. They are put on feet targeted to hit the April boards. I guess that's 17 months. I'd think pasture or confined cattle could get there much sooner. They only cost you money until you can sell them so the sooner the better in my mind.
