Thanks guys, in all it seems there is something fishy with this guy. He is new in the area and just started beef this year. It seems that some people got too much back and some not enough. Maybe just a mix up in the back of who got what percentage. I have never looked at the hoof weight compared to the packaged weight before because I and my customers felt that the "quanity" we got was fair. When you carry 7 or 8 grocery bags full of beef out of the locker you feel satisfied and don't worry about it. But then the next year you only get 3 or 5 bags you start to question. Again thanks for the responses and I learned about % of hoof weight compared to packaged weight.
