A great one pot chicken meal that's fast and easy. When you don't have the time to work it and go fresh, try this out:
3 pounds boneless chicken, cut into 1/2 inch cubes
3 cans veg-all (mixed vegetables)
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
In a dutch oven or large frying pan, brown chicken cubes using soy-sauce and olive oil. Salt and pepper to taste. Add in veg-all, the 2 cans of soup, and add 1 can of water. Cover and simmer on medium-low heat for 20 minutes.
Serve on a bed of rice.
