Many years ago Dad told a story about watching an old German butcher making sausage.
He had a new young kid helping him who looked dumbfounded by everything the old man was grinding.
The old man turned to him saying eyes, eyes, bring me a bucket of eyes. The kid's mouth dropped open then he realized

I have, can take it or leave it, definitely an acquired taste. Was very surprised years ago when I met an exceptionally pretty young woman who liked head cheese. Her parents loved it, so she ate it as a child and it brought back happy memories.
