Maybe not as humid. But we are still humid except maybe in a drought? We had almost constant rain this summer, that's a lot. I do admit, we did not have as much heat as you did.
I would really think the fat cover would cause more problems than the marbling. Wouldn't you?

intramuscular fat was what i was refering too
