the cattle that Gudgell and Simpson bred were typically larger than the Lents cattle by several hundred pounds at maturity

According to Hazelton's, Anxiety 4th Herefords, on page 85 it states:

"When Beau Brummel was in full bloom he would weigh 2,700 pounds"

On page 111 it states, "Lamplighter was a bull of unusual scale, weighing 2,500 pound in strong breeding flesh"
