Does anyone know where I would get information on what an average carcass will yield? How much will be burger, steak , roast , etc.. Thank you :clap:

These calculator's are just a good rule of thumb. We sell alot of beef on the rail and about every so many someone calls and wonders why they did'nt get more cube steak or why there wasnt more of something. Any time there is some thing put in writeing ther will be someone finding out a difference. Human Nature,I guess!

Best place to find a true average would be to call IBP or someone who cuts every beef the same. These custom shops will have a wide range of cutting orders. I recall one time we had two different cutting orders on the same whole beef. A difference of 137 pounds in boxed beef between sides solely on the cutting order.
