Amen, that is the gospel truth. Choice is the easy answer for the culinary disabled. Select makes you use your cooking skills. Choice is mainly due to the influence of the British breeds. The people in the British Isles (almost 90% of my ancestry is from there) don't have a great culinary heritage, so they had to have a cow that taste good on its own and was about idiot proof when cooking. On the other hand, the continental Europeans had to learn how to cook for their beef to taste great. Mexicans have a great tradition of making tough beef taste good too.callmefence":2qrwo9km said:
