Recipe for coon

In the last week and 1/2 I have hauled off 8 coon, some of them 1/2-3/4 grown. Wanting to know who has got a recipe. We tried to fry them like chicken, and that did not work. They tasted alright but they were tuff.
Lets have some thoughts.

You're going to need to parboil them first. Boil them for about 3 hours or until tender. Once you have them tender, you can roast, bake or barbq them just as you would any other meat. Taters, carrots, onions, etc...

Make sure you remove the glands from the front legs or they're going to stink really bad!
 
Sometimes I put mine in the crock pot with all the trimmings,taters,sweet taters apples ect...that will get em tender and get the dryness out of them.Other times I use a roasting bag to retain moisture and roast in oven.
 
Pressure cook for about 1/2 an hour then fry like squirrel. At least that's the way a friend of mine does it and he claims it's delicious.

Maybe you could grill it like a possum or boil it like an armadillo. :lol2:

You've obviously never seen possum cooked up. I would put that right up there with lutefisk, maybe even nastier then that
 
Wifes uncle used to be the sheriff around here years back, and he used to have big Bar-BQ's with coon meat. He had an old-timer getting them for him who used to play tricks on him from time to time. One time he had killed a cat and put it in with the bunch of coons he had killed and skinned for cooking... after that one time; uncle Jack would always tell the old-timer to leave the feet on them so he could make sure he was getting coons instead of cats..

It's still that way around here. You can sell plenty of coon in the correct section of town, however you must leave 1 foot on, or they won't buy it.

If it wasn't for that, I could sure clean up the cat population round here... :lol2:
 
A friend of mine says that he has had bobcat and it wasnt bad, seems to me that housecat would be about the same.

I have eaten "roof rabbit" in the Phillipines, wouldn;t be my first choice, but not all that bad. No real flavor, kind of absorbs the flavor of the stuff it's cooked with.

What's the big deal? If you can eat coon, you might as well eat cat in my opinion. What do raccoons eat? Herbivores or omnivores?

Wait just a minute now....not even a coon will eat a "lutefish". I did hear they were going to be serving it up at the innauguration dinner in January. (prepared numerous ways) They'll be on the endangered species list soon.

A coon will eat just about anything, I know that they like corn caus I am catching them at my deer feeder. I bait the trap with cat food, or those little caned weenies.
 
WE have them come around the house sometimes...had an old sow and 4 young ones coming everynight to eat dog food....found out that was about as good a bait as you could use. Caught everyone of them and hauled them about 15 miles from home and put them out in a cornfield.
