When describing an animals build, what is meant by the term 'cresting' or 'the crest'?

I could guess, but as usual I would most likely be wrong..... what's a "large, defined" crest tell you. Okay I'll guess, muscling ability(?).

It tells you about masculinity and a functional endocrine system. In short the bull is in hormonal balance with a high level of testosterone. Usually associated with good fertility.
