Ma'am is a contraction of the polite and formal Madame.
(though it has become acceptable to leave out the apostrophe)
So the correct form would be "Y'all ride them horses down here?" ... "Yes, Ma'am."
Mam is colloquial for mother so "My Mam would've whipped my hide to be seen dressed like that"
