"Cowboy Potatoes"

Cowboy Potatoes


INGREDIENTS

4-5 lbs Red Potatoes (or White if preferred)
1 Stick Butter
1 Medium Yellow Onion (Sliced)
1-2 Garlic Cloves, Finely Minced
1 tspn Salt
1 tspn Ground Black Pepper
½ tspn Ground Dry Oregeno


INSTRUCTIONS

Preheat oven to 350°.

Use a saucepan, melt the butter. Once the butter is melted, add the minced garlic, salt, pepper, and oregano. Let stay warm and barely simmer.

While the saucepan is going, cut the potatoes into approximately 1” wedges, and slice the onion into wedges as well. Mix them together and place them in an iron skillet that can accommodate the 4-5lbs of potatoes and an onion. A Dutch Oven also works great, otherwise use a high sided pan. Place the potatoes and onions in the pan. Then take the saucepan and pour the contents over the potatoes and onions. Use a spoon and mix it all together after you pour to make sure everything is coated evenly.

If using a pan without a lid, cover with aluminum foil. Otherwise, if using a cast iron Dutch Oven with a lid, you are fine.

Once all put together, place in oven and bake for 1-hour, occasionally stirring every 20-minutes. After 1-hour, remove lid or aluminum foil and continue cooking for 30-minutes to brown.

After that, you are done.

Made this same thing the other night minus clove garlic (used garlic salt) plus green peppers. Cooked on the grill, was a hit!

Yeah, a little oregano goes a long way. Knew a woman once that loaded banana pudding up with oregano so much you couldn't tell it was banana pudding.
