Cowboy Casserole

Family loves it!

1 box of Jiffy Cornbread mix
-mix up as instructed on box

1 can rotel
1 can (the step up from regular sized can) of baked beans
2 lbs of hamburger
1 pack of taco seasoning (I make my own)
1 cup of shredded cheese

Brown hamburger. Add taco seasoning as directions call for.

Once ready, add can rotel and can of baked beans. I like to throw in some homemade candied jalapeños. Mix all together.

Throw into greased casserole dish. Spread cornbread mix on top. Then add cheese. Bake for 30 minutes or until the cornbread topping is starting to brown.

We serve with a little sour cream on top but a little butter is delicious too.
