Chopping and Bagging Reeds Canary grass

Still have standing water in my hay field and tried and failed at making dry hay and will soon lose the chance at a second crop if I can't get first removed. I would like first hand experiances on chopping grass and bagging it. My reeds is mature and dropping seeds so probably not the best palatibility either. Will the fermintation process improve the feed quality?

Never chopped and bagged RCG. But have ran it thru a cutter baler and wrapped it for balage. It definitely helps with palatability as the coarse stems are chopped into smaller more edible pieces. I have had the coarse stems poke thru the plastic so it can be a pain the the butt.
