We have a bunch of frozen blue berries and my wife (who is the main blue berry consumer) says they are too mushy to eat as straight pop in the mouth fruit. Any help on breads or recipes on blue berry bread other than muffins or pancakes. Is there anything else to do with them so they're not wasted.

Thanks,
Alan

Blueberry cobbler -

As easy as they come.

Preheat oven to 325
Thaw Blueberries and place 2 cups in a 9" x 9" pan.
Melt 1 stick of butter and pour over Blueberries
In a bowl, mix, 1 cup of self rising flower, 1 cup of sugar, 1 cup of milk
Pour this mixture over the blueberries but do do stir.
Cook until done or top is golden brown.

The crust will rise to the top.

This is the easiest cobbler you will ever make and taste absolutely great. We have make this with strawberries and peaches as well.

Let me know how you like it.

Nowland Farms's recipe is good w/almost any fruit - fresh, frozen, or canned. And you really can't mess it up!

Found this recipe in my pile :D and it has marked (very good) on it.

Blueberry Bars

13/4c sugar
1c. margarine
4 eggs
1t. vanilla
3c. flour
11/2t baking powder
1/2t. salt
1 21 oz. can blueberry pie filling (You can make your own)

Cream sugar and margarine. Add eggs and vanilla. Add flour, baking powder and salt.
Spread half of the mixture in an ungreased 15x10x1 pan. Carefully spread pie filling over dough, sprinkle with nutmeg. Drop remaining dough by the teaspoon over pie filling.
Bake at 350 degrees for 45 minutes.

This is something our family likes and it is easy to make.

Berry Crisp

1 qt (4 cups) blueberries or blackberries
1/3 to 3/4 cup sugar
1/4 cup butter or margarine
3/4 cup uncooked quick rolled oats
1/3 cup flour
1/3 cup packed brown sugar

put berries in baking pan and sprinkle with enough sugar to sweeten.

soften or melt butter and mix with oats, flour and brown sugar til crumbly;sprinkle over berries. Bake at 350 for about 30 minutes until lightly browned.

I normally cook mine a little longer because I like the juice to be thicker. It is something that you can adjust according to your taste.
