Apparently I heard it called it Roostershire sauce as a small child and it’s stuck.

I called it Winchestershire sauce. I remember as a very young kid being told by a friend of my parents that they only had Remingtonshire sauce. I was disappointed. I wanted the real thing, Winchester.

W-sauce is like poison to me. With in a few minutes I can tell if they cooked with it.

Yes, but did you notice the box fan on the right. It's like a supercharger! I never let the smoke get more than a little Grey. Most of the time it's not very noticeable in the stack.

I noticed both the height of the chimney and the fan. I am surprised the smoke has long enough in the box to touch the meat.

You are right. I have too much air flow, not enough mass, the wrong configuration, an inefficient wood user and just a real time killing system. It still makes good brisket.
