We were turned on to Tilapia by some friends a couple years ago and have a very high opinion of it.
We buy ours at Wal-Mart and we buy the "fresh filets" not the whole fish or the bagged fillets.
Break a couple eggs in a bowl, beat them
then dip you fillets in the the egg and roll in another bowl of corn meal and then set into a piping hot skillet with about a 1/4" of oil in it make sure the oil is really hot.
Cook for a couple minutes on both sides and as soon as we pull them out of the skillet we season with ...
Tony Chachere's Spice N' Herbs Seasoning and I am somewhat generous with it.
Try that technique and that seasoning and see if you don't become a fan!!!
