3waycross":1qz44wvn said:It's a tomato and cream sauce with pancetta. She used a can of imported cherry tomatoes from Italy for the base. They were incredibly sweet.
So here's the ingeredient list
canned cherry tomatos(canned imported San Marzano's would work as well)
Onions
Garlic
Pancetta
Olive oil
Hvy cream
Fresh Basil
Pecorino Romano
Uve di Mozarella(fresh balls of mozarella cheese, also called fiore di latte)
Saute the pancetta and drain and reserve(pour off most of the oil from the pancetta)
Saute the onions and garlic in olive oil(deglaze with a little white wine)
Add tomatoes and reduce by about 1/3
add hvy cream
just before serving add pancetta and fresh Basil
drain pasta and toss it with the sauce for a minute
Pour onto serving platter and top with Pecorino Romano and Fiore Di latte.
Garnish with fresh basil.
Mangia Tutti!
