Custom $75 kill .89/lb HW
USDA $85 kill .95/lb HW, $650 minimum processing fee
USDA $100 kill .90/lb HW no minimum

Custom booked 4 mo out, both USDA 6-12 mo.

Our butcher here In Minnesota:
USDA - I believe is $75 kill $150 usda inspection and miscellaneous fees
our invoice just reads usda $225 processing .80 lb hw

pre-pandemic processing was .65 cents lb (23% increase) to current 80 cents
custom booking is 3 months out usda 6 months+

It's been too long ago for me to look at it here, but it was a lot less than that here in 2017.

No other 'cut & wrap', handling, disposal fees?

I just had two 1,200# steers done for $1,110 at a custom butcher. Cube steaks were tenderized, got summer sausages and beef sticks, and some deboning. That is baked in that price
 
Last spring it was $80 for farm slaughter and $0.80 a pound to cut and wrap. They charge a $20 disposal fee which I saved by taking the guts, head, hide, etc out to the bone yard for the coyotes to dine on. Right now I am sure they are swamped. Elk season just got over on Sunday. Last spring they were about 2 weeks out getting a kill date.

No extra fees for cut and wrap or disposal, no taxes added-straight cost. Each one has different add-ons available-#1 does cutlets and stew meat at no extra charge, but can’t sell individual cuts since they are custom. They were 79/lb until October 1-timing is everything.
#2 will sell head and hide-$45 each, 3 won’t but will cut cheek meat. They also “forget” some pieces at pickup.
Just curious about prices in other areas.
