Saving Canola Oil

After canola oil is used to deep fry a turkey, can it be saved in the freezer?
 
If you strain it good I don't see why not. There are some things to consider before doing it though. If you were cooking it high enough to smoke the canola oil (450F) I'd throw it out. If there was a lot of salt in the rub/injection. Salt will break vegetable oils down and the rub flavor will be in the oil transferring over to the next bird you fry in case you're wanting a different flavor. You sure don't want the oil to go south on you during your next fry. I've never kept any around in a freezer, but I don't think I would keep it longer than a year. Be sure to check and make sure it's not rancid before using it after storage.
