Ribeye area

My cousin and I were talking cattle yesterday and the topic of REA epds came up. Exactly what part of the ribeye steak do they measure? Using the formula for the area of a circle, we determined that the actual eye of the ribsteak would have to be about 5 and 3/4 inches to have an area of 18. Are we on the right track or do they measure more than just the eye? Boone

Diameter should be 4and 3/4 instead of 5 and 3/4. Boone

The ribeye is not a circle so calculating the area is a little more complicated. There is a grid that can be used to measure the area. Here is a link
