Hi! I'm currently investigating the feasibility of building a slaughterhouse and processing facility on a ranch here in Texas. The meat would be used by the ranch and, hopefully, sold to restaurants and upscale grocers as premium aged beef. The cattle are grass fed, mostly Brangus and we would probably not process more than 25-30 head per lot, so it would be a fairly small operation. Does anyone have any resources that they can point me to in order to figure out the details? Any help would be greatly appreciated.
