Fajita Burgers

These are a favorite with the family. No matter how lean the meat is, these burgers come out moist.

2 lb ground beef
1/2 cup diced onion (small onion or half a larger one)
1/2 cup bell pepper, diced (green, red, your choice. Again use half if you get a big one)
1 or 2 cloves garlic, crushed
2 Chipotle chilies, finely chopped (we buy them canned. Use more if your family likes spicy food.)
1/2 teaspoon cumin
1 tablespoon Worcestershire sauce
juice of 1/2 lime (optional)
2 tablespoons chopped fresh cilantro or parsley (optional)
salt/pepper to taste

Saute onion and bell pepper until somewhat softened, let cool slightly. Mix everything together well, shape into patties. Best out on the grill, but you can add a shot of liquid smoke and make them in a skillet, too. To really doll them up, top them with avocado slices, lettuce, tomato slices.
