if you quit milking , she will dry up. as long as you are encouraging milk production she will continue to produce it.

Is she sore with mastitis or something? Why isn't she letting the calf nurse?

If you've got her in a place where you can milk her, you should be able to get her to let the calf nurse unless you just enjoy bottle feeding.
