Dry cold and alfalfa

A week of real dry cold has done a number on my alfalfa bales, dried it out like wheat straw...in fact the cows seen to like the straw better.

Stupid question....what exactly happens to it? Would think good alfalfa or hay would hold up to minus temperatures.

The stems get hard and dry...more than usual, at least mine did. Some in the middle of the stack is better. DMc
