Right. One of many advantages huge economies of scale create.The advantage of large processors is in the sale of the ''drop'' or byproduct. Small processors pay for removal and the big packers sell for enough to cover there labor cost.
The scale has the small processor on one side, and most often with very slim margins on low volume. They serve small producers and local customers.
On the other side of the scale are the big boys who process over 100 million head per day out of a dozen or so plants. They ship product all over the US and the world. The advantage of that level of economies of scale is impossible to beat.
