Contracting Finished Beef

How do you go about contracting finished steers/heifers? We only finish 10-15 a year but it seems that the fat market really drops at the local salesbarn during the summer. It would be nice to be abe to lock in a price but I am sure it is not that easy.
 
We normally sell June or July about at a 1150-1200lb avg live weight. We used to sell to NFO and then we had about 61 to 63% yield. So about 700-750lb carcass weight.
 
I market a percentage of my cattle with them, I deliver to plants thought the Midwest that I marketed thru them. They have contacts at many slaughter plants.

Okay would I have more options if I fed them a little bigger say 1300 lbs avg? Also are their any plants close to Minnesota?
