Here's what we use/cook.
Brown the hamburger and drain the water/oil off and put the meat in the pot. Wipe out the skillet out with a paper towel as you will use it to cook the sausage. I cut the sausage up ¼" wide then cut it in half, cook it and put it in the pot. Wipe out the skillet again. Then I cook the onions, mushrooms, peppers, celery with just enough olive oil to keep them from sticking. Then I dump all that in the pot and add the rest of the stuff. It is even better if you can let it sit in a crock pot over night. Taste it while it is cooking, add ketchup, garlic, salt and cayenne pepper till you get it to suit you. You can add water as needed to get it to the consistency you like too.
1 pound ground beef chuck
1/2 pound bulk Italian sausage
1 can chili beans
1 can kidney beans
1 can diced tomatoes with juice
1 can tomato paste
1/2 cup ketchup
1/2 large yellow onion, chopped
1-1/2 stalks celery, chopped
1/2 green bell pepper, seeded and chopped
1/2 red bell pepper, seeded and chopped (OR JUST USE A WHOLE OF ANY COLOR)
1 cup chopped mushrooms
2 tablespoon bacon bits
½ cup banana peppers
1/4 cup beer (OR WATER)
1 packet of MILD chili mix
1-1/2 teaspoons Worcestershire sauce
2 tablespoons minced garlic
1 teaspoons dried oregano
1/2 teaspoon ground cumin
1 tablespoon hot pepper sauce (e.g. Tabasco™)
1/2 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon cayenne pepper
1/2 teaspoon paprika
4 tablespoon white sugar
