Why Worry About Grades?

Was noticing Beef Cut Out prices this week.

Since almost half of all beef went ungraded, and the diff between ungraded and choice was only about $.08 lb. for carcasses, why go to the trouble?

When we start getting paid the premiums that good beef deserves, I suppose people will attempt to improve quality then?

I agree - we don't see near enough spread between select and choice until we go to the grocery store.

But what irks me is the base price were getting - look at the cost of feed today compared to two years ago, then compare that to the rail price for fats today vs two years ago. someone on down the line is raking it in.
