I'd like to have a picture of that steer without the white marks to hang on my wall in my feedroom to remind my of what a steer should look like.

Just thought it should be named 'beef cuts of meat" chart. The chart would lead you to believe that you cut up Angus different than other beef breeds.
 
Pounds of retail cuts from yield grade 1, 2, and 3 1200lb live wt steers are given at lower right corner. Have you seen the premium priced angus beef dogfood alpo sells now? I guess some of the trim goes into that. Get some for your dog. :D
