reclaiming pasture-how low/high to cut?

I'm just getting started on about 50 acres of pasture in southern Oklahoma that hasn't been mowed/maintained in prob 5-10 years. 5-10 ft tall pecans and oaks, 5 ft high plum thickets, and other "weeds", but a good variety of healthy grasses as well. I'm going to keep it as a native grass pasture for the first couple years at least. I'm probably over-thinking this, but in thinking about suppressing weeds/woody growth and encouraging grasses, is it better to mow short (4-5") or high (10-11") on the first time through? Or does it not really matter?

Mow high....it will be easier on your equipment also.

Is there any way you could dig up those young trees and sell them?

Spray the trees and then burn it the following year

hadn't thought about selling the trees...may have to look in to that!
