Recipes for hot pepper sauces and such

My wife's uncle has a surplus of habineros and jalepenos. He asked for some recipes to make some bulk salsa, sauces and maybe even a hot pepper jelly.
Let me know what you guys have up your sleeves.
He doesn't want to can them whole or freeze them
 
This won't get rid of many peppers its pretty good hot sauce

1/2 cup chopped mangoes
3 jalapeno peppers
1 Tbs sugar
1 cup vinegar white
1 tsp ginger
1 tsp salt
1/4 cup lemon juice
1 kiwi, peeled and chopped
1 tsp cumin

Blanch peppers in vinegar. Toss the vinegar, deseed the seeds in the peppers. Mix remaining ingredients and put in a blender and blend till smooth.
 
Hook, unless he wants to pack them in vinegar or dry them I really don't know of anything that you can do that uses a lot of peppers. They are just too hot to use in quantity. Drying is the simplest thing and since you will be smoking some meat you could smoke some then dry them. Really good that way.
 
Ill do that. I gotta go by his place anyway. Ill grab a bunch. He eats them like candy corn. 3-4 whole habineros a day.

Anything with mango in it has to be good......mango makes everything better!
