I think most are hereford cross; the last one also shorthorn, the others with some black breed, possibly angus.
 
What would lighten the red coat on the first ? much lighter than Hereford looks more like some of the herf/char pics i have seen but not sure.

Just pure genetics is why. Depends on the sire, and the dam of course. never know which one is going to show up, on the offspring.
I have two Limflex calves born out of the same bull, but different dark red cows who are purebred RA. Those two calves turned out different. One was light colored, the other dark red like its mama.
