it's a whole lot like how we do it... Minor differences in models of machinery though.

Friend of mine got kicked in the nuts by a dead cow when we must have hit a nerve skinning her while she was on her back... just watch out for that!

we always hang them & then skin

I lay them on their back to. When I get the all but the back skinned out I then I hoist them up and the weight of the cape helps taking the last of the hide of the back. I think pound for pound a cow is one of the easiest things to clean.
