i have never heard of the meat an animal research center. does it talk about all breeds of cattle

The Meat Animal Research Center (MARC) in Nebraska is a USDA research facility. They have probably done more extensive research on the differences among beef breeds than any other research group. You can read about much of their research by going to their web site at:
