I have 10 pounds of venison cut up into jerkey. I need some advise on what to do next. I have a smoker that I used last year. It turned out OK, but I am sure one of you have a better recipe. Please share.

Soy sauce and brown sugar makes a teriyaki flavor jerky. But the few times I have made jerky, I used a curing salt along with the seasoning. There is also a good jerky cure and seasoning packaged kit from Hi Mountain co. (www.himtnjerky.com), but I guess you don't have time to get an order shipped unless you freeze the meat, then thaw it back out and make jerky.

I'll look and see what I can find in the way of home made but I have made the himountain jerky before and have found the seasoning blend to be better than anything I have made from scratch. I particularly like the hickory and the original but I've never tried one I didn't like.
