I have a JD 5055 with 361 hours on the tractor. Anytime I put, what I consider, a small load on the tractor the temperature goes up into the red. (The particular load being a set of 6' disks and I'm in medium 2nd running at 540) The funny part is I'm not losing any coolant in the reservoir and when I stop to check the coolant is not extremely hot. I can even take the cap off the radiator with no real pressure or excessive heat. Now, I can go down a gear and keep the needle in the green but it still favors the right side of the gauge doing basically anything. It is very sensitive as well, the temp will climb even if I'm turning the tractor. I can pull the same set of disks on the same terrain with a 38 Hp red tractor and the needle never moves.....I'm thinking it's possibly the sensor or the gauge but I would like some feedback.

Maybe the thermostat is stuck closed.

If the thermostat was stuck closed it would truly overheat. If you can take the cap off without coolant pushing out it's not hot. The 50 series is known for little electrical Gremlins especially with the gauges.
Do confirm with a laser thermometer and check for debris between radiator and oil coolers. But it doesn't sound like it's actually overheating

I was always fighting temperature problems with implements on our JD. I would blow the radiator out daily, try to run when it's cool, etc. Thought it was just too much load for the tractor when it's hot out. The water pump finally came completely undone and we had a new one put on. I can run non stop now with the needle straight up, no where near the red, no matter how hot outside now. I literally think it had been screwed up since the day we bought it.

When we got our 2009 5045d it over heated something awful. They fooled with it could not make it better. Ended up being something a fuel tune. No problems since

Earth issues to the dash panel can cause those problems with gauges. Does your fuel gauge run true? Try one of those basic temp gauges with the tube that runs from sensor to the gauge. They do not run on any power from the tractor other than a back light. They are cheap on ebay. At least you will know where you stand.

Neighbor has a 2016 4052 and has the JD field service contract. I was there one day when the service guy was servicing. He had a 2 ½' length of ⅜" copper tubing with the male Industrial fitting on the end and a brass shut off valve, like HF sells. The pipe had half a dozen holes drilled near the far end straight through the pipe, about an inch apart giving you air outlets on both sides simultaneously. End was mashed shut and soldered.
This device of his was made especially for cleaning radiators, oil coolers, and AC condenser coils. I thought it was novel so I make one and you'd be surprised what you blow out of your coils with this tool.
On the Non-contact Infrared thermometer, HF sells them too for about $30 which is one of your better $30 investments. You'd be surprised how many times you'll grab it for a piece of information. Takes the guess work out of temperatures......I even use mine for soil temperature testing prior to planting, walk around my engine and measure temps at different spots, you can tell if your stat is working just by measuring the block adjacent to the stat cover and then go over and shoot the radiator top and bottom and see just how your cooling system is working.....then move on over to your oil and see how it looks and check your hydraulic cooler, on and on.

Thank you for the feedback, much appreciated from everyone!!! I'm gonna start with the least expensive and work my way through. I'm probably gonna make the blower and buy an IR thermometer regardless of the outcome. I'm heading to the farm tomorrow, I'll let you all know what the culprit turns out to be.
