This has been in the planning stage for over a year but I stumbled across these persimmons in and old house lot last month and after tasting them I thought they had good potential and I had high hopes for toward the outcome so I thought I'd do a test run of these before the other persimmons get ripe.

Ended up making and fermenting a mash along with some tupelo honey and came up with this outstanding drink that lived up to my hopes and so is named High Hopes. I ran into a couple of snags during the processing but will be able to work these bugs out and tweek it a little on the next larger batch but as it stands its very good and very very very sneaky.

Persimmons are a tasty fruit but there always seem to be more persimmons than ways to use them. We have a tree of the hard Japanese type that have more the consistency of an apple. Very tasty for fresh eating but the soft ones are better for baking.
 
Its there. Nothing like I had hoped. The alkaloids are leaving a funky taste but if you let it breath for a few minutes it tastes like a cheap red wine. Drinkable but not what I was hoping for. I'll age it some more and if it doesn't sort itself out I'll make some white wine with it.

I think you are right but will take some filtering then the simmon wine can be used as a chaser. :lol2:
