Happy Thanksgiving

Help Support CattleToday:

Happy Thanksgiving everyone. Curious as to what everyone ears on turkey day. We are mostly traditional here
New York strips of home grown beef this year. Cooked sous vide and final sear on the grill. Sweet taters, artichoke, and not sure what else is on the menu today, but kind of try to eat what we grow except the artichokes.

We celebrated early to accommodate everyone's schedule. Turkey 🦃, fried, smoked , baked (oven) ; spiral cut ham , sweet potato casserole, broccoli casserole, mashed potatoes, crescent rolls, green beans. Cornbread dressing, cranberry sauce , giblet gravy. Pound cake and sweet potato pie . We ate Tuesday night and I'm still full !

Turkey and dressing at my wife's sister's home.

The blessings in our home are many. My older sister rung the bell last week after a couple of years of cancer treatment. My wife and I are healthy and find ways to be curious and appreciative. Our home is warm and our refrigerator is full. The people we know smile when they see us and we thank them for their presence in our lives. Life is good. We wish all of you similar triumphs and blessings.

roast turkey, pan gravy, mashed potatoes, stuffing/dressing (Mother's old Alaska recipe), cranberry sauce, peas with pearl onions, Waldorf salad (made with whipped cream only, no mayo. than you to my dear Mother in Law) black olives, baby dills, sparkling peach "cider," pumpkin pie with whipped cream.

cut the bird into pieces this year, roasted on a rack over a sheet pan in a couple hours and was probably the best roast turkey I have ever done, and I have done ALL the ways. worked better than spatchcock, or cooking upside down, or any of the other attempts to match up cooking times for white and dark meat. by cutting it apart, you just take the breast meat out of the oven when it is at temp and cook the other parts longer. since we always buffet it in the kitchen anyway, no need to have a whole bird presentation at the table. and can use back, neck, and wing tips ahead of time for broth.

most of house are non-drinkers so I finished a bottle of red wine by myself after dinner while recovering from cooking all that again. I keep swearing I am not doing it anymore but man, when the bird came out like it did this time, I am ready to thaw another one this weekend!
