I have a heifer with a bummed shoulder that I can't get much weight on. My coworker wants to buy her carcass to ground up. If he's grounding her up do we need to hang her?

I will defer to those on here that slaughter their own. But, I don't think the carcass has to be aged if it is all going to ground beef. I do know some packers break down the carcass and only age the tender cuts and grind the rest immediately.

YES, you still need to hang her. Not as long 5-6 days compared to 10-14 days to cut her up. If you don't you'll have some pretty bloody hamburger.
