As long as it has been killed by a good frost an not still green (can't imagin any in the country this time of year unless s. Texas) you should do good. I have some in corn stalks but it has wheat growing in it and they are doing great. Might need some tubs out though. And the right mineral.
 
we baled some after the grain was harvested and sold it to a neighbor when hay was short. the protein was low, but it might be okay for a dry cow. The bales were a little damp and went through a fermentation. He said the cows loved it and turned down good fescue hay for the milo bales. You might consider strip grazing the stubble if it is feasible.
