Finishing crop

What crop would you plant for a steer to graze in the summer and be finished on grain in the fall?
I was thinking about red river crabgrass, brown top millet, or maybe sudex.
My primary concern is Flavor.
Does it even matter?
Will you be able to taste the difference?
Does a steer taste the same grazing on fescue vs rr crabgrass vs millett or sudex?

Thanks for your opinions. I may also post this question in the grass and hay boards.
 
anything is better than fescue to get gain in the summer-- but also more problematic
I wouldn't worry with it for just one calf---- just spend more time with it shut up and on feed.
 
Grazing Corn.

Corn is a high energy grass that also sets on grain but you can graze it prior to that for great grass fed gains and fat.
