Need a recipe for buns, one that I cannot screw up please ..

Not sure about the lingo. When I think "bun", it is something to hold a hamburger or hot dog. A small piece of baked goods to have with a meal is a "roll". I think that is what you want? Here is one I like from my old favorite Kitchen Klatter cookbook, circa 1950.

Lena's Butterhorns

1 cup scalded milk
1/2 cup shortening (or butter or lard or cooking oil, or combination, doesn't seem to matter)
1/2 cup sugar
1 tsp salt
1 pkg dry yeast
3 beaten eggs
4 1/2 cups flour, plus flour for dusting the work surface

Combine milk, shortening, sugar and salt. Cool to lukewarm. Add yeast and stir well. Add eggs, then flour and mix to smooth, soft dough. Knead lightly on floured surface. Place dough in greased bowl, cover and let rise in warm place until double. Divide dough into thirds; roll each third on lightly floured surface to 9 inch circle. Brush with melted butter. Cut each circle into 12 wedge-shape pieces. Roll each one, starting at wide end and rolling to the point. Arrange in baking sheets with point tucked under so they won't unroll. Leave space between them for the last rise. Brush with melted butter and let rise until very light. Bake at 400 until lightly browned, 12-15 minutes.

My Grandma's called them dinner buns, and my mom ,and that is how everyone around here refers to them too . They are smaller than a hamburger bun ,but bigger than a roll. Must be just semantics :lol2:

I found Grandmas recipe ,it was very similar to yours and gave it a try this morning as a warm up batch for this weekend. I haven't made buns in 15 years so I was pretty happy with the outcome . :cowboy:

Thanks Slick , the pup and I tried one ,they are light, fluffy and taste really good . Just wish they were more symmetrical and didn't have the bumps on the top . :(
 
HD, those buns/rolls/bread things are beautiful! :clap: I'm sitting here salivating. Bumps? Not symmetrical? You must be kidding!

Those were exactly my thoughts Gale. They are nicely textured HD, I will have to try them but won't be posting pics of my effort :)

Oh, darn, HD -- They taste so good, but they have a couple bumps? :lol: I'm not a "baker," so I sure could settle for that! I think I'll have time (and bravery) to try that recipe this weekend.
 
Here is Grandma's recipe.

1 2/3 cups warm evaporated milk
1 2/3 cups warm water
2 tbsp butter
2 tbsp lard/shortening
2 eggs
4 tsp salt
4 tbsp sugar
8 cups white flour
3 tbsp yeast

Glaze
1 well beaten egg

Now I just threw this in my bread maker and set it for dough and let the maker do the mixing and the first rise.
If you are doing it by hand then Combine milk, shortening, sugar and salt, add yeast and stir until disolved. Add eggs, then flour and mix to smooth, soft dough. Knead lightly on floured surface. Place dough in lrg greased bowl or place on counter and cover with clean cloth and let rise until at least double in size, punch down cover and let rise again until light and fluffy. Gently form dough into one long roll and cut into equal portions. Form gently into balls and place so almost touching on a greased cookie sheet or square pan . Use pastry brush to apply the glaze evenly onto the tops of each roll.

Place in the middle of 350 preheated oven and bake for 25-30 minutes or until the tops are a light golden brown. Remove and let cool .

You will need to add more water or more flour depending on the brand you use, this recipe is a go with your instinct one. That must be why I never could master it when I was first married, I followed the recipe to a T instead of using my own judgement on the dough consistency.

Makes about 20-25 lrg rolls

HD- I feel for you. You must be upset by the lack of uniformity on those rolls. I the spirit of cooperation on this forum I am offering that you can send all those rolls that don't meet your specifications my way and I will gladly dispose of them for you. :D

Kathie ,I just used the shortening that you would use to make pie crust, so Crisco will work well. I imagine you could use all shortening or all butter as well, don't know why Grandma like to use both .
 
Here is Darrell's Grandmothers roll recipe. He remembers her making these and he just LOVED them.

2c scaled milk
4T butter flavored Crisco
4T sugar
2t salt
Heat milk in a sauce pan and add all ingredients. Let cool to luke warm.

1 pkg yeast
1/2c warm water
1T sugar
Mix together in a bowl.
Add milk mixture
Start adding flour until you have 4-5 cups. Mix it all together.
Add enough flour to get a slightly sticky dough.
Let rise once. Punch down and let rise again.
Grab about a raquetball size piece of dough pat out flat and put a small piece of butter into the center and pinch up edges to form a ball.
Let rise again.
Bake at 375 degrees for 15-20 minutes.
