Had a couple of friends come out from town and harvest a cow elk. One less, hundreds to go. I provided the tractor and the moral support. They wanted to dress it with the head up so I accommodated. Worked well enough.

Well, I asked them that, they just said it was their preference.
First time I saw it done this way was by an older European butcher on a beef he slaughtered here. I had to admit at the time that it was a very efficient way of doing things. He said in the old country that's how they did it.
I still hold them in the traditional fashion when I do it, I guess just because that's how I've always done it. Which is a pretty poor reason really lol
