Had a couple of friends come out from town and harvest a cow elk. One less, hundreds to go. I provided the tractor and the moral support. They wanted to dress it with the head up so I accommodated. Worked well enough.

Well, I asked them that, they just said it was their preference.
First time I saw it done this way was by an older European butcher on a beef he slaughtered here. I had to admit at the time that it was a very efficient way of doing things. He said in the old country that's how they did it.
I still hold them in the traditional fashion when I do it, I guess just because that's how I've always done it. Which is a pretty poor reason really lol

This elk was lung shot and bled out inside.
When the fella did it with the beef he did what we always do, cut the jugular while the heart was still beating and let it pump out.
Do you think it matters which way up they are to bleed out? :???:
 
Gravity would help that way. Elk guts seem to have a pretty good grip on the elk. But that is really the preferred method to pack one out. It sure beats quartering them and strapping to a packboard.

I have never had an elk down in a place you could get to with a loader tractor to hang it. It is always gut it laying on the ground. Skin it laying on the ground. Quarter it laying on the hide, on the ground. Strap the quarters to a packboard and crawl out of the canyon. And a couple of them it has literally been crawl up the hill as it was too steep to walk with a quarter strapped to your back. It must be nice.
 
Ya, I've crawled out of a few nasty places myself with a quarter on my back. Believe me, I appreciate the loader as much as anyone!
